Miso itself is a salty paste made from fermented soya, and is much better known as the basis for Japan’s famous miso soup. For the soup, the paste is added to some stock (dashi), along with other ingredients such as potato, seaweed, mushrooms and shrimps. Two instant kinds are available in the UK – the better kind comes with the miso and dashi granules in separate sachets, while the cheaper kind is a bit like drinking a diluted stock cube.
